The Institute of Education Sciences has a really nice Kids Zone section to their website. One of the activities is a Create A Graph section where students can watch a tutorial (if they are uncertain on when to create what type of graph), look at examples of different graph types, and actually create graphs online. They can them save these graphs and add them to documents or presentations. This is really nice for students that are not yet ready to tackle excel.
If you have students that you need to be challenged, then the Kids Zone section's Chances activity might be to the way to go. They can explore probabilities by using dice rolls.
